La Pergola, situated on the hotel’s panoramic terrace, takes guests on a festive gastronomic journey. Headed up by world-class Chef Heinz Beck, guests are invited to indulge in a sumptuous Christmas dinner carefully curated for an unforgettable experience. The menu features Marinated amberjack with goat yogurt, cucumber, and “carpione” snow, Scallops with cauliflower and extract of oxidized onion, Crustaceans with mushrooms in oil and red fruit, Squid Tortellini with seafood and basil sauce, Red Mullet and pumpkin with fennel flowerheads flavor, Lobster on artichokes with black truffle, Turbot, and winter scents, and a Variation of chocolate with iced hemp powder to end the night on a sweet note.

Christmas Eve Dinner at Uliveto Restaurant by Executive Chef Fabio Boschero

On Christmas Eve, Executive Chef Fabio Boschero and his team will serve an equally impressive eight-course dinner banquet at Uliveto Restaurant. Guests can enjoy gourmet specialties overlooking the hotel’s vast verdant parkland. There, they can savor a range of delectable dishes, including Sautéed scallop served with pea soup and caviar, Salmon gravlax with mashed potatoes, yogurt and horseradish, Lobster with green cardamom butter, lemon and ginger, Phyllo pastry baskets with Taleggio cheese and vegetable brunoise, Cannolo with whipped codfish and truffle, accompanied by homemade bread and salty panettone. Each course promises a world of flavors to share and experience with your nearest and dearest. The live stations will be offering Artichoke and saffron tortello, red prawns and marjoram, and Codfish confit served with corn crumble, onion, coriander, sprouts, and emulsion of Amalfi lemon. End the meal on a sweet note created by Executive Pastry Chef Dario Nuti, Pineapple marinade and Maraschino mousse followed by Garland of sweet shortbread and Christmas flavors.

Rome Cavalieri invites its guests to celebrate Christmas the Italian way with a brunch like no other, where authentic local flavors have been handed down from generation to generation through real Italian recipes. Executive Chef Fabio Boschero and the fantastic team at Uliveto have carefully crafted a festive menu to remember, from Italian cold cuts to polenta and mulled wine, with the warm and toasty comfort of a crackling fireplace.

Followed by a sweet Christmas Toast for some mouth-watering desserts created by Executive Pastry Chef Dario Nuti, served with spirits tasting. This authentic Christmas celebration is perfectly accompanied by live music for a truly magical feast. The event will be held in the Tiepolo Lounge & Terrace, starting from 9 pm to midnight.

The evening commences with a lavish Gala dinner at Uliveto restaurant featuring an impressive menu created by Executive Chef Fabio Boschero which includes: Steamed oysters with horseradish sauce and passion fruit jelly, Scallops au gratin, Grilled razor-shell with lemon oil and parsley, Oven-baked venus clams with aioli sauce, Duck terrine with sautéed winter root salad and red fruit sauce, Shellfish saccottini with Armagnac sauce and sea asparagus, Amberjack sous vide at 60°on Mediterranean almond pesto sauce, Pomegranate and cucumber sorbet, vanilla and champagne, Veal fillet in puffed quinoa crust with saffron potato mousse, asparagus tips and Barolo sauce. The menu includes Oyster with artichoke mojito, Red shrimp on avocado with lemongrass tapioca and lime, Marinated amberjack with celeriac and black truffle, Pumpkin cooked in clay with smoked leek mayonnaise, chestnuts, and roasted barley infusion, Parsnip tortellini with extract of oxidized mushrooms, almonds and white truffle from Alba, Grilled cauliflower with caviar and caper leaves, Turbot with mountain curry and hummus of walnut and chard, Venison on consistencies of carrot and cardamom.
